Quarantine Key Lime Pie

Missing the flavors of the Bradenton Area? Good news – you can have a taste of your favorite Florida dish right in your home! This Key Lime Pie recipe is brought to you by Dana Johnson, the Executive Pastry Chef of PIER 22. And he’s made it even easier using ingredients that you’ll be able to find at your local grocery store (or get them delivered to your door).

 

For the crust, you will need a 9 Inch Graham Cracker Crust usually easy to find at the store.

Quarantine Fix: You can also use a chocolate cookie crust, or make your own by grinding up 4 cups of graham crackers, shortbread cookies, gingersnap cookies, or vanilla wafer cookies and mixing with 2 tablespoons of melted butter and pressing into a 9 inch aluminum or glass pie dish. Bake for 10 minutes at 350 F until light brown.

 

For the filling, mix 2 – 14 ounce cans of sweetened condensed milk with 5 eggs and 1 cup of lime juice. If you prefer a different citrus flavor, you can use 1 cup of lemon juice, orange juice, or other fruit juice. 

Quarantine Fix: If whole eggs are unavailable, you can substitute 8 ounces of liquid eggs, such as Egg-Beaters.

Quarantine Fix: If sweetened condensed milk is unavailable, you can make you own using 2 cups of milk (almond milk and soy milk work as well!), 3/4 cup of sugar, and 1 stick (4 ounces) of butter. Combine ingredients and bring to a boil. Reduce heat to a low simmer and cook for 30 minutes. Add to the key lime filling as described.

After filling is mixed, pour into pie crust and bake for 20 minutes at 350 F.
Remove from oven and cool completely, approximately 2 hours.

No Bake Option
You will need 1 box of Citrus Jello flavored gelatin, ¼ cup boiling water, 2 Vanilla Yogurt cups (6 ounces each), and 1 container Cool Whip or whipped topping (8 ounces). Combine boiling water and Jello and whisk until fully dissolved.

Add yogurt and stir, then gently fold in the Whipped Topping last. Pour into pie shell and refrigerate until set, at least 2 hours.

Top Your Pie
You can top with any whipped topping!

Quarantine Fix: Make a meringue with 1 cup of egg whites and ½ cup of sugar, whisked on medium speed in an electric mixer or hand mixer until very light and fluffy, with a whipped cream consistency.

 Quarantine Fix: Make your own whipped cream! Whip 2 cups of chilled heavy cream with 2 tablespoons of sugar on medium speed in an electric mixer or hand mixer.
